A Week of Eid.

Ohmygosh. It's been over a week since my last post...i was honestly very very busy! It was so crazy and i was all over the place that i didn't even snap much photos even though i carried my camera everywhere!

see that tiny piece of red cake? that's my red velvet that got gobbled up in less than half an hour it was "presented" on the morning of eid...hehe. the green pandan layer one was bought by my cousin.

the food. kari daging, kuah lodeh, ayam masak merah, nasi jagung, nasi impit, acar mentah nanas and oranges.

Eid.

Tomorrow is Hari Raya Aidilfitri. 
And tonight we are preparing all the ingredients and stuff for tomorrow's feast. This year mom decides to make Kari Daging (Beef Curry) instead of the usual Rendang. And as always, Ayam Masak Merah (a chicken dish) is a must in our home. The nasi impit is already done this evening and so is the kari daging, all is left is the chicken.

This year, just like the past two raya, i baked red velvet cake, and it is now waiting to be iced. My cousin is also here to celebrate raya with us. The house is already cleaned and the furniture rearranged last night and the night before, hence why i haven't been online the past few days.

Raya here in Cheras, Kuala Lumpur now hadn't been the same as it used to be, it's not as festive as when i was little. As a matter of fact it has been quite dull since 3-4 years ago...probably because the kids nowadays are not like how the kids when i was younger was. We were a much livelier bunch...

But raya is still raya now matter what...the food, the cookies, the chit chatting and the duit raya is still as it ever were.

Samperit & Chocolate Chippy!

OH MY, i totally forgot to post the cookies recipes yesterday....
weeeeell, here it is then... (シ_ _)シ


SAMPERIT COOKIES
10 oz margarine
7 oz icing sugar
2 egg yolks
2 teaspoon vanilla extract
4 oz plain flour
10 oz corn flour /cornstarch
4 oz custard flour

1. Line baking tray with baking paper, set aside and heat oven.
2. Sift and mix all dry ingredients well and set aside.
3. Cream margarine and sugar, add egg yolks and vanilla extract, mix well.
4. Gradually adding dry ingredients and mix well.
5. Place in samperit mould (there two kinds, the flower one and the flat one/see picture: i used the flat one cause to me it produce a better and more scrumptious cookie than the flower one because the flat one bakes evenly and made a more crumbly cookie!)
6. Press cookie on to lined baking tray and bake for 15-20 mins / 150c oven.
7. Cool on rack before storing.

 DOUBLE CHOCOLATE CHIPPY!
125 gm butter
1 egg
300 gm plain flour
6 tablespoon icing sugar
6 tablespoon brown sugar
1 tablespoon cocoa powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
2 cups chocolate chips

1. Line baking tray with baking paper, set aside and heat oven.
2. Sift and mix well flour, baking soda and cocoa powder and set aside.
3. Cream butter and sugar, add vanilla extract and egg. Mix well.
4. Gradually add dry ingredients. Add chocolate chips at the end. Mix well.
5. Drop spoonful by spoonful (teaspoon if you want small cookie, tablespoon if you like big chunky cookie) onto baking tray.
6. Bake for 20-25 min on 150c oven.
7. Cool on rack before storing.

Grilled Lamb & Raya Cookies

Hi! (* ̄▽ ̄)ノ
Today mom and me made grilled lamb for berbuka. No complicated marinade, the lamb was simply rubbed with cumin and fennel seeds, salt and black pepper and some vinegar (i used pomegranate). Let it sit for two hours and grill as usual.
Served with a side of fries, veggies and classic campbell's mushroom soup.
oh sorry, i honestly forgot to take better pictures of them cause i was in the middle of baking raya cookies! the one on the right that looked like weird sausage is actually popia goreng or fried spring roll and the sauce was simply store bought black pepper sauce mixed with some mayo (my mom loves mayo!!!).

And i'm sure y'all can see the cookie in the background! Here it is....
first up is Biskut Samperit (samperit cookie) and below is Double Chocolate Chips.
Samperit is a family favorite, i swear it melts in your mouth! And who doesn't love chocolate chippy?!!

Alfajores Cookie & Dulce de Leche FAIL.

Hi!
This is my FIRST attempt at making my own dulce de leche (from a can) and alfajores cookies.
And let me tell you........the dulce de leche part...EPIC FAILURE.
yes. that's how i felt.

But anyway, the cookie part was good. But what's a sandwich cookie without its filling right? A not-so-great one that is. 
Still eat-able though, with NUTELLA as substitute...ヽ(*≧ω≦)ノ

OK. Here is what i did with the dulce de leche.
1. I tried boiling the can method. I boiled it for 4++ hours. Then when i opened it, the condensed milk was still very runny and not even browning AT ALL. It was probably because I used the cheap kind, it was very thin to begin with...so note to all, if you want to make your own dulce de leche from can, DONT USE THE CHEAP CONDENSED MILK.

2. Then I tried the microwave method. Which ended up messier cause the milk just bubbled up and spill everywhere on the microwave dish. I may have made the mistake of not covering it up with cling film......But it still doesn't work after I did, even after almost 10 min microwaving and stirring in between 2 minutes or so. I blame it on the thin cheap milk....the milk just got wasted and I could only salvage about 1 cup or so.....

3. Frustrated, I resolve to the stove. I put the remaining milk in a non-stick pan and put it over low medium fire and kept stirring like a crazy person. It seemed like forever, trust me (and my sore arm)...but it seemed to be working...BUT THEN! Since  I personally have never made dulce de leche before and from the great advises of the internet cooking gurus, i stuck on stirring until what i thought was the right consistency (caramel brown but not very thick) for the alfajores filling...AND IT WAS, LET ME TELL YOU, AN OVER-STIRRED! HAHA! So the dulce de leche ended up TOO THICK. Well......how am I supposed to know that it would be slightly runny on stove but get thicker when it is cooling (AM IDIOT, I KNOW).

And so the dulce de leche ended up like this.....
I rolled them into balls (used with oil to keep it from sticking all over EVERYTHING) and now i have  caramel hard candy. HAHA! But they're really nice.....so the milk wasn't a total waste...

But before that...I STILL STUBBORNLY TRIED slapping them on to my cookies....which ended up like this here....
i don't know if you can see it, it might looked okay in 1st picture but on 2nd you can see the hard cracks of the caramel candy in between....hehe

Here is the recipe for the Alfajores cookies.

·         1 cup cornstarch
·         3/4 cup all-purpose flour, plus more as needed
·         1 teaspoon baking powder
·         1/2 teaspoon baking soda
·         1/4 teaspoon fine salt
·         8 tablespoons unsalted butter (1 stick), at room temperature*
·         1/3 cup granulated sugar
·         2 large egg yolks
·         1 tablespoon pisco or brandy**
·         1/2 teaspoon vanilla extract
·         1 cup Dulce de Leche, at room temperature
·         Powdered sugar, for dusting (i didn't dust my cookies ;p)

*in Malaysia the butter is in a form of a brick (250g) so in my experience, half of that is the same as 1 stick.
**(i'm muslim so i substitute the alcohol with pomegranate extract, but you can use raspberry or any other kind of extract, seems fine with me)

1.     Combine the cornstarch, flour, baking powder, baking soda, and salt, whisk briefly and set aside.
2.     Mix the butter and sugar in the bowl of a stand mixer fitted with a paddle attachment on medium speed, scrape down the sides of the bowl with a rubber spatula. Do this until the mixture is light in color and fluffy, for 3 minutes. Add the egg yolks, pisco or substitute, and vanilla and mix well for about 30 seconds. Stop the mixer and scrape down the sides of the bowl. On low speed, add the reserved flour mixture spoonful by spoonful and mix until just incorporated, about 30 seconds.
3.     Turn the dough out nicely onto a piece of plastic wrap and wrap it tightly. Place in the fridge until firm, at least 1 hour.
4.     Meanwhile, heat the oven to 350°F and arrange a rack in the middle. Prepare tray with baking paper and set aside.
5.     Remove the dough from the fridge, unwrap it, and place it on a lightly floured work surface. Lightly flour the top of the dough and roll to 1/4-inch thickness. If the dough crack, it can easily be patched back together. Stamp out 24 rounds using a 2-inch round cutter, rerolling the dough as necessary and until all of it is gone.
6.     Place the cookies on the prepared baking tray, 12 per tray and at least 1/2 inch apart. Bake 1 tray at a time until the cookies are firm and a pale golden on the bottom, about 12 to 14 minutes. The cookies will remain pale on top. Transfer to a wire rack to cool.
7.     Flip half of the cookies upside down and gently spread about 2 teaspoons of the dulce de leche on each. Place a second cookie on top and gently press to create a sandwich. Dust generously with powdered sugar before serving! YUMMY!

PS: i doubled the recipe cause i thought 12 cookies is just isnt enough!!(*´∀`*)

Malaysian Malay Weddings.

(that's if i have any.....tsk tsk.)


so here is something random but "somewhat" food related......hehe
WEDDINGS.
This was an old photo of my cousin's wedding. I was the "maid-of-honor" of some sort, the picture above is the banquet table for the bride and groom and their close family. Typical Malay weddings are like this, fancy banquet table for bride+groom+close family and standard tables for other guest. Malaysian Malay wedding guest invites usually are above 300 people. The food are mostly caterings these days and are consisting of specialty rice and various side dishes from lamb, beef, chicken, fish to vegetables and fruits.

This one is when the bride+groom posse are "berarak" (marching) from a certain distance (usually a place just further away from the guest's views) with typical Malay's kompang group in the background (a sort of group playing a musical instrument which i don't know how to explain but you can see for yourself in the next picture).

And when the bride+groom arrives, they are seated at the pelamin for all guest to see. The bride+groom usually sits there for 15 minutes to maybe an hour or so, depending if there are guest wanting to take pictures and tepung tawar (its does not translate as plain flour....but instead it means a sort of activity where guest comes and throw fragrant shreddings of flowers/rice/pandan leaves and rose water towards the bride+groom, as a sign of blessings). 
There you can see the kompang group singing and hitting playing their instruments (which is called kompang). And of course, what's a wedding without cakes? This was a vanilla sponge cake with buttercream.
NO thanks to my cousin's GREAT photography skill, i didn't have any decent front view of the pelamin to show here but,,,i do have two other wedding pelamin that i took when i went to my other cousin's and neighbor's weddings.

Energy Drink.

Do you like energy drink? i do. whenever i drink one, i'll be up all night.

RED BULL sold in Malaysia are the Thailand version.
can is shorter, wider and gold. it is a lot more sweeter and honey-like.

the overseas version. taste less sweet and have a sort of bitter aftertaste (to me atleast).

but red bull is only my 2nd choice...only when my all time favorite isn't available..
and my all time favorite energy drink is??? LIVITA of course (ღ˘⌣˘ღ)  ・*:.。. .。.:*・
(my dad introduced it to me when i was younger. he would buy half a dozen (sometimes more) for our trips in the car going back kampung or holidays)

the ones we have in Malaysia are like this.
i had the regular ones growing up 
but now i love the honey ones simply cause i love it sweeter!

Midnight Snack.

oh. my. goodness.
midnight snacks.
where do i even begin?

i have this uncontrollable cravings of sweets at night all the time.....sometimes i'll get a tiny piece of chocolate or something...but tonigh there's no chocolate or cakes or any other...but some cream soda, some leftover vanilla ice cream and ruby pearls..and lots of biskut roti gula (sort of like tiny bread but it's crispy and have butter and sugar on them...i don't know what other people from other country call them....)

Kerang and Mystery Drink!

Hello! Today's berbuka is kerang goreng cili or fried cockles with chilies and kerabu ceylon 
(ceylon is the name of the leafy green, and kerabu is sort of like salad where the ingredients are fresh. malay's traditional kerabu is usually spicy and are made with fresh coconut.) 
and the mystery drink....! there are lots of ingredients in it too! 
can you guess what it is????

SIX ingredients! 
1. kidney beans
2. sago pearls
3. brown sugar syrup
4. coconut milk
5. ice
6. cendol!

oh ho ho...the 6th ingredient sort of gave the mystery away.....
mix it all together!
and........
yummy yummy cendol drink! yayy!
